SP Lesson 16 - 18 : Feuille D' automne, Bûche de Noël, L' Exotic Charlotte

Haih...since starting Superior, we have been making something inedible, like marzipan, chocolate work....finally this week we made Gateau, yeah !!

Feuille D'automne means Autumn leaves. It's basically meringue disks layered with chocolate mousse and covered with chocolate ganache. It can be decorated with dark chocolate couverture, cocoa powder and icing sugar.

Bûche de Noël is also known as a Chocolate Christmas Log. It can be made with or without the inclusion of alcohol. The components of the cake we made include a Cointreau mousse, Chocolate mousse, Bombe mix, Nut Dacquoise, Cointreau stock syrup and Chocolate Glaze which is quite different from Buche de noel that I usually see.. that one is the sponge roll and decorated with butter cream.

This cake can also be finished with butter cream if alcohol is not used in the recipe.

L' Exotic Charlotte : Charlottes are cold desserts that have a bavarois moulded in rings lined with various spong cake products (especially the ladyfingers). Classic charlottes are usually decorated with whipped cream.

The one we made contains poached tropical fruits, coconut mousse and mango jelly...that's why it is called L' Exotic Charlotte.

Feuille D' automne...It was pretty hard to make the stripe on top...when I finished making it...I thought it was quite ok..but then when I looked at the one that chef Keith did...Haaa....so much different :P

Since Seok didn't come for the class on the last 2 days, I gave my Feuille D' automne to him and his brother....He said it was nice (haha...of course you can't say anything else lol)

That Feuille D' automne looks amazing! It reminds me of a haute couture dress! Is it hard to do? It looks very hard!
